No this recipe has nothing to do with divination or does it? As someone who considers themself a Kitchen/Hedge witch, i consider cooking and baking my spells. Added bonus it is one of my favorite things to make and eat. It also seems to be the most requested meal by friends and family alike. So I thought it would be good to share.
Lasagna Soup Recipe
1 Package (15oz) Ricotta cheese
1/2 cup Parmesan cheese, chopped
1/2 cup Mozzarella cheese, shredded
1lb to 1.25lb Turkey sausage, sweet
1 Green Bell pepper, chopped
1 Tbsp Basil, dried
1 Tbsp Oregano, dried
0.25 tsp Cayenne pepper (optional)
1 6oz can Tomato paste
1 15oz can Tomatoes, petite diced
6c (48oz) Chicken stock
1 12oz package regular pasta or gluten free pasta (I like Ronzoni gluten free rotini)
Mix all the cheeses together and pop in the fridge until you’re ready to serve.
In a large soup pot, cook the turkey sausage until done, breaking into small pieces. Add green pepper, spices, and tomato paste; stir to combine. Cook on medium-high heat for 5-10 minutes until spices are fragrant and tomato paste has started to caramelize.
Add diced tomatoes and chicken stock to the sausage mixture. Bring to a boil then simmer for 30 minutes.
When the right amount of time has passed (~10 minutes), start cooking the pasta. Drain. (Regular pasta could be added directly to the pot of soup at this point.)
Everything should be done around the same time.
To prepare your soup bowl:
First, add as much of the cheese mixture as you like. Then add cooked pasta. Spoon the hot soup over top, and add salt and pepper to taste. Let the cheese melt a bit. Enjoy!
That’s it…pretty simple really. It’s even easier when you don’t need to use gluten free noodles! If you make this one let me know!
